Fluffy Cloud Drop Biscuits Yield 9Author Madeline KingPrep time10 MinCook time15 MinTotal time25 MinPrintWith ImageWithout ImageFluffy Cloud Drop BiscuitsIngredientsEquipment: two large baking sheets lined with parchment paper, food processor or large mixing bowl, medium mixing bowl360 grams all purpose flour (3 cups)1 tablespoon granulated sugar2 1/2 teaspoons baking powder1/2 teaspoon baking soda1/2 teaspoon salt170 grams (3/4 cup) cold unsalted local butter (light butter works, too) cut into pieces170 grams (3/4 cup) cold plain Greek yogurt1 large egg beaten3 tablespoons cold waterInstructionsPreheat oven to 400 degrees F.In a mixing bowl or food processor, add flour, sugar, baking powder, baking soda, and salt.Using your fingers or a food processor, cut in butter. Work the dough until mixture has pieces of butter the size of peas.In a small bowl, whisk together Greek yogurt, egg, and water. Add liquid ingredients to flour mixture, and stir until dough just comes together.Pour the mixture on lightly floured counter and knead until the dough comes together. (Don't overwork the dough.)Form into tennis ball sized pieces and drop onto lined sheets.Place biscuits on prepared baking sheets and bake for 12-15 minutes.
