My recipe allows you to enjoy a hearty, tender pot roast without the searing step. By generously coating the meat in seasoning prior to cooking, the spices caramelize and create a crust identical to what you would get from searing.

Ingredients

• 3-4 pounds of beef chuck roast
• 4 large carrots, cut into chunks
• 4 large potatoes, cut into chunks
• 1 onion, sliced
• 3 cloves of garlic, minced
• 2 cups beef broth
• 1 cup red wine (or additional beef broth)
• 2 bay leaves
• 3 Tablespoons of your favorite local BBQ seasoning
• Freshly ground black pepper
• Redmond smoked salt for serving

Instructions

1. Preheat your oven to 325°F.
2. In a large oven-safe pot or Dutch oven, place the roast in the center. Surround it with the onions, bay leaf and garlic.
3. Pour in the beef broth and red wine (or additional broth). Pat the BBQ rub onto the meat on all sides along with freshly cracked black pepper.
4. Cover the pot with a tight-fitting lid or aluminum foil.
5. Place the pot in the preheated oven and roast for about 3 hours.
6. Remove from oven. Lift the lid (be careful of hot steam) and add the carrots and potatoes. Cook for about another hour-hour and a half, until the meat and potatoes are fork tender.
7. Remove from the oven, discard the bay leaves, and allow to rest for at least 10 minutes. Serve with the savory juices over the veggies and meat.
