Mix together until smooth.Season the steaks all over with the remaining salt and pepper.Brush a grill or pan with olive oil and heat it to medium-high heat.Sear the steaks for 4 to 5 minutes. Flip and cook to desired doneness, 4-6 minutes more for medium-rare.Remove the steaks from the heat, transferring it to a wire rack. Dollop the chile butter on top and let rest for at least 5 minutes.Add to a cutting board and slice the steaks thinly across the grain. Serve immediately, garnished with chives if desired. Enjoy!
