Savor the essence of summertime with my Key Lime Pie. It is one of my favorite desserts that balances the tartness of lime juice with a velvety rich-yet-light yogurt filling. Topped with a cloud-like whipped cream and lime zest, every bite is a bright, lip-smacking burst of flavors!

Ingredients

Filling

• Two 14-oz cans sweetened condensed milk
• 1 cup plain whole milk Greek yogurt
• 1 tablespoon grated lime zest
• ¾ cup fresh lime juice (squeeze your own limes, it's worth it - avoid the bottled kind!)
• 1 tsp vanilla extract
• 1/8 tsp salt
• optional 1/8 tsp green food coloring
• Store-bought graham cracker crust

Topping

• 1 cup cold heavy cream
• 2 tablespoons confectioners' sweetener
• 1 teaspoon grated lime zest
• 1/8 tsp salt

Instructions

Pie

1. Preheat oven to 350° F and set an oven rack in the middle position.
2. In a large bowl, whisk together the sweetened condensed milk, yogurt, lime zest, lime juice, vanilla, salt and food coloring. Pour the mixture into the graham cracker crust.
3. Bake for 15 minutes, until the filling is slightly set; it will still jiggle a bit. Let cool at room temperature for 30 minutes, then place in the refrigerator to chill thoroughly for about 3 hours.

Topping

1. In the bowl of an electric mixer (or with a handheld), beat the heavy cream until soft peaks form. Add the confectioners’ sugar and beat until medium peaks form. Top the pie with the whipped cream.
2. Store the pie in the refrigerator until ready to serve. Slice the pie into wedges, wiping your knife clean between slices, and serve cold.
