Ingredients 1 tablespoon olive oil3 cloves garlic, minced (can sub 1 tsp garlic powder) 1 tsp dried thyme 1 tsp dried rosemary 1 tsp Spicewalla Garlic Herb Seasoning1 (2-pound) rack of lamb 1 teaspoon salt 1 teaspoon black pepper 2 tablespoons Dijon mustardInstructionsPreheat the oven to 425 F.Combine the oil, garlic, thyme, and rosemary and garlic herb seasoning in a small bowl.Use a paper towel to pat the lamb dry. Season it with salt and pepper.Place the lamb in a roasting pan and brush it with the Dijon mustard.Sprinkle the prepared seasoning mixture over the top of the lamb. Press it down into the meat to make a crust.Cook for 18-20 minutes, or until a meat thermometer reads 125 F.Allow to rest for at least 5 minutes before slicing.
