Smoky Uncured Jambon Royale with Mustard Glaze

Our Niman Ranch hams are uncured, dense and very flavorful. They are hand rubbed and smoked until fully cooked over real hardwood. Enjoy our hams on their own or add a quick, succulent sweet mustard glaze to add an extra something special.

• 3/4 cup Robert Rothschild Raspberry Honey or Smoky Mustard
• ¾ teaspoon black pepper, coarsely ground
• ½ teaspoon red wine or apple cider vinegar
• Niman Ranch Jambon Royale (approx 2 pounds) Cooked Lean Ham

Instructions

1. Preheat oven to 325 degrees.
2. Line a roasting pan with nonstick aluminum foil or coat with cooking spray. Place a wire rack/roaster over top of the pan and add the ham.
3. In a small bowl, stir together the mustard, pepper, and vinegar until blended. Reserve half (about 1/3 cup) to serve with the ham.
4. Score the ham with a knife by making several crisscross cuts in top of ham about 1/8-inch deep each. Using a pastry brush, add some glaze.
5. Heat for 20-30 minutes per pound, or until meat thermometer at center reaches 135°F.
6. 15 minutes before ham is done, remove from the oven and turn the oven up to 425°F.
7. Brush with glaze and return to the oven until the glaze is caramelized. Thinly slice ham and serve with reserved glaze. Enjoy!
