Grilled Ribeye Steaks with Onion Blue Cheese Sauce

Last year Dan and I took a trip to Florida where we enjoyed amazing steaks at a restaurant called Chophouse 1200. When we ordered the ribeyes, there was an option to get a side of gorgonzola sauce. I had a feeling it would be amazing (my intuition usually steers me in the right direction) and it was absolutely incredible!Now every time I cook steak, I always crave it with a side of that same sauce. After a few experiments, I found the perfect copycat recipe. I use Rogue Creamery Blue Cheese which we carry (the top rated blue cheese brand in the country) so you know it’s going to be decadent!

• 4 ribeye steaks
• Kosher salt and freshly ground black pepper
• 1/2 stick Vermont Creamery Unsalted Butter, softened
• 1 large yellow onion, sliced
• 1 cup half and half or heavy cream
• 3 tablespoons Worcestershire sauce
• 3/4 cup local blue cheese, crumbled

Instructions

1. Preheat the grill to a high heat. (You can also sauté the steaks in a skillet over medium-high heat if you prefer.)
2. Sprinkle the steaks generously with salt and pepper. Grill the steaks until medium-rare, about 4 minutes per side, and then remove from the heat.
3. Melt the 1/2 stick of butter in a large skillet over medium-high heat, and then sauté the onions until golden brown, 7 to 8 minutes. Pour in the cream, a dash of salt and pepper and the Worcestershire sauce. Let it bubble up, then add the blue cheese and stir together to melt.
4. Place the steaks on plates and spoon the sauce over the top. Enjoy!
