Creamy Sundried Tomato Thyme Baked Chicken

• 2 tablespoons olive oil
• 6 chicken breasts
• 3/4 cup lower sodium chicken broth
• 1/2 cup heavy cream (can sub full-fat coconut milk)
• 1/2 cup sun-dried tomatoes, coarsely chopped
• 1/2 cup freshly grated parmesan or pecorino cheese + a few Tbsp. more for topping
• 3 tablespoons minced garlic
• 1 tablespoon thyme
• 1 teaspoon red pepper flakes (1/2 teaspoon for less spice)
• salt & pepper
• fresh basil for garnish

Instructions

1. Preheat oven to 375 degrees. In a large oven-safe skillet, heat olive oil on medium-high heat.
2. Heavily season chicken with salt and pepper. Sear until golden (around 4 minutes) per side.
3. Transfer chicken to a plate.
4. Return skillet to low-medium heat. Brown garlic for one minute, then add in thyme, red pepper, chicken broth, and cream. Occasionally stir for five minutes.
5. Fold in sun-dried tomatoes and cheese. Add chicken to skillet, submerge each piece in sauce. Bake whole skillet for 15 minutes. Garnish with fresh basil, thyme and parmesan!
