Creamy and Spicy Sausage Tortellini Soup

This creamy Sausage Tortellini Soup is a 30 minute meal that’s easy to make with sausage, kale, my favorite seasonings, broth (made easily with our bone broth base), and cream!

Ingredients

• 1 pound ground Italian sausage, hot or mild
• 1 yellow onion, diced
• 3 Tablespoons flour
• 1½ teaspoon Spicewalla Garlic Herb Seasoning
• 1 teaspoon garlic powder
• 1 teaspoon hot sauce
• 1 teaspoon dijon mustard
• ¼ teaspoon pepper
• 1 cup light cream
• 5 cups chicken bone broth
• 2 tbsp white wine
• 2 cups fresh kale, torn into small-medium pieces
• 1 package (about 9 oz) refrigerated/thawed tortellini
• Salt to taste
• 1 pinch red pepper flakes

Instructions

1. Remove the casings from the sausage if you purchased links. Cook and crumble the sausage and diced onions over medium-high heat until the onions are softened and the sausage is cooked through, 8-10 minutes. Drain grease. Add the garlic powder and cook for 30 seconds.
2. Add the flour and cook for 1-2 minutes.
3. Add 1½ teaspoons Spicewalla seasoning, 1 tsp hot sauce, mustard, ¼ tsp pepper. Stir to combine.
4. Add the chicken broth and wine. Use a silicone spatula to scrape the fond off the bottom of the pot. Add the cream. Bring to a gentle bubble over medium heat, reduce to a simmer.
5. Add the kale and tortellini and simmer for 3-4 minutes. (If your tortellini needs longer cooking time, add the tortellini first, then the kale during the last 5 minutes.)
6. Taste the soup and add salt if desired. Start with ¼ tsp and add more after that if needed.
7. Transfer to serving bowls and top with a pinch of red pepper flakes. Serve with garlic bread and freshly grated parmesan!

Notes

Make ahead: exclude simmering the tortellini until ready to serve.
