I wrote this recipe to inspire you to use your Maple Craft and Old Friends Farm Syrups in a new way. They can serve as the sweet element in a simple homemade dressing, balanced by lemon and olive oil. Our range of uniquely flavored syrups make it fun to discover new combinations.A jewel-toned salad with peppery arugula, accented with crisp apples, tangy Vermont Goat Cheese and Q’s Sweet-Roasted Pecans. Dressed in a vibrant elderberry lemon vinaigrette, this makes the perfect dinner side salad or meal paired with your favorite protein.

Ingredients

Salad

• 1/2 cup Q’s Sweet Roasted Pecans
• 8 ounces arugula (organic when possible)
• 2 honeycrisp apples, quartered, cored and thinly sliced lengthwise
• 1/4 red onion (thinly sliced)
• 1 (4 oz) package Vermont Creamery Goat Cheese Log, crumbled
• 2 Tbsp dried cranberries

Elderberry Dressing

• 1/2 a large lemon, juiced (~1 Tbsp)
• 1 Tbsp Maple Craft Foods Elderberry Maple Syrup or Old Friends Farm Elderberry Syrup
• 1 generous pinch sea salt
• freshly ground black pepper to taste
• 3 Tbsp Boyajian Olive Oil

Instructions

1. Prep salad ingredients and add all to a large mixing bowl.
2. Prepare dressing in a mixing bowl by adding all ingredients. Whisk vigorously to combine. Taste and adjust flavor as needed.
3. Top salad with dressing. Toss to combine and serve immediately.
4. Note: Dressing keeps at room temperature for 2-3 days when well sealed.
